Chunky Choccy Cookies

(The original recipe included cherries, not chocolate chips)
100g vegan marg
100g sugar
1 tsp of vanilla essence
250g flour
1 tsp baking powder
pinch of salt
100g choc chips
100ml plant based milk (approximate)
 Cream together marg and sugar then stir in Vanilla essence. Sieve and stir in flour, baking powder and salt. Chop and stir in choc chips. Add milk and stir. Preheat oven to 180 degrees. Grease tray with a little marg. Divide mix in to approx 12 bits, roll into balls and put on tray and press down with a fork. Cook for around 10 mins, take out when still soft and allow to cool

Coffee-Iced Buns

  • 1 cup flour
  • ¼ cup brown sugar
  • 1 tsp baking powder
  • 1 tsp. cinnamon
  • pinch of sea salt
  • 2½ Tbsp. melted coconut oil
  • 1½ Tbsp. maple syrup
  • 1½ Tbsp. raw agave
  • (generous) ½ cup coconut milk
  • 1 tsp. apple cider vinegar
  • 1 tsp. vanilla extract
Pre-heat oven to 180 degrees. Mix coconut milk and apple cider vinegar and let curdle. Melt coconut oil slightly and add runny ingredients then add to coconut milk and ACV. Mix dry ingredients in a large bowl and add wet mix to it and stir until well mixed. Bake in bun tray for 15 mins. I've added Betty Crocker's Coffee Icing to the top.
