Coffee-Iced Buns


  • 1 cup flour
  • ¼ cup brown sugar
  • 1 tsp baking powder
  • 1 tsp. cinnamon
  • pinch of sea salt
  • 2½ Tbsp. melted coconut oil
  • 1½ Tbsp. maple syrup
  • 1½ Tbsp. raw agave
  • (generous) ½ cup coconut milk
  • 1 tsp. apple cider vinegar
  • 1 tsp. vanilla extract
Pre-heat oven to 180 degrees. Mix coconut milk and apple cider vinegar and let curdle. Melt coconut oil slightly and add runny ingredients then add to coconut milk and ACV. Mix dry ingredients in a large bowl and add wet mix to it and stir until well mixed. Bake in bun tray for 15 mins. I've added Betty Crocker's Coffee Icing to the top.

Chocolate Cupcakes


I added chocolate chips to mine, which settled near the bottom in a chocolately gooey mess, possibly improving the recipe. Fondant topping has lemon flavouring, just to confuse folk.

Vegan Strawberry Cupcakes




My mix turned out too dry (maybe because I cut the strawberries into chunks) so I added some soya milk.  Not paying attention, I poured about 4 times too much vanilla extract in. Delicious! If you would like to cut out the baking stage and just eat the batter, it tastes like Angel Delight. Yes, make extra so you can lick the spoon a few times. I embellished my bun-buns with runny icing and edible glitter to attract the magpies.
